MEXICAN WEDDING COOKIES
(Makes 2-3 dozen)
I N G R E D I E N T S:
- 2 c all-purpose flour
- 2 t vanilla
- 1/2 t almond extract
- 1 c unsalted butter (do not substitute)
- 1/2 t salt
- 3/4 c powdered sugar
- 3/4 c finely chopped pecans

I N S T R U C T I O N S:
PREHEAT the oven to 325 degrees.
BEAT the butter, salt, vanilla, almond extract and 1/2 cup of the powdered sugar.
ADD the pecans.
ADD the flour slowly until incorporated.
SHAPE into 1 inch balls or crescents and place on greased baking sheet
BAKE for 15-20 minutes or until the edges are just starting to brown.
REMOVE from the cookie sheet and cool.
ROLL in remaining powdered sugar.
