SOUTHWESTERN GREEN CHILI CHEESE QUICHE
(Serves 6-8)
| P I E C R U S T:
F I L L I N G:
- 3 large eggs
- 1 1/2 cup half & half
- 3/4 cup cheddar cheese
- 1/2 cup jack cheese
- 1 can (4 to 6 oz.) green chili peppers (more or less to your taste) - use fresh if available
- 2 T chopped onion
- 1 small can sliced ripe olives
- salt & pepper to taste

How to make Green Chili Cheese Quiche:
LIGHTLY WHISK eggs and the half and half
ADD all the remaining ingredients and mix
POUR over crust BAKE at 350ºF for 45 min.
GARNISH top with chopped tomato and/or chopped green onion if you wish.
Tip: You can adjust this recipe by increasing or decreasing the amount of green chili (chile) peppers and/or olives to your taste. New Mexicans do love their green chilis!
